Bean Burgers and Chips

As summer winds down, freshers’ week is now upon us, along with its associated ailments, notably freshers’ flu and hangovers. This is the perfect time for comfort food, and what better comfort food than burgers and chips? These are quick, easy and cheap to make, and a brilliant substitute for meat burgers and processed vegetarian supermarket burgers. A firm family favourite, they have gained many compliments from meat-eating friends over the years. Whilst it’s probably easier to buy frozen chips, these chips are surprisingly easy, and delicious. So grab some friends and some beers, and enjoy this perfect hangover food!

Bean Burgers and Oven Chips

Makes 5-6 burgers

For the chips:

1-2 potatoes per person

Sunflower oil, or other oil

For the burgers:

Sunflower/vegetable/olive oil

1 large onion, or 2 small

3-5 cloves garlic, crushed

1 tsp marmite, or 1 stock cube

2 tins aduki beans, drained and rinsed (kidney beans will probably work if you can’t find aduki beans)

75 g bread crumbs (= 2 slices bread) (If you don’t have a blender to make bread crumbs with, you can buy them ready crumbed in big supermarkets, or just chop them up if not, or rub stale bread against the large holes of a grater).

Salt and pepper

White flour

Burger buns, plus condiments and salad (ketchup, mayonnaise, mustard, lettuce, tomatoes, onion, gherkin)

Method:

  1. Preheat the oven to 220-240°C.
  2. Chop the potatoes into chip shapes, and put them in a bowl. Boil a kettle, and pour the hot water over the potatoes. Leave for 5 minutes. Drain the potatoes well, and put them in an oven tray. Coat them in oil. Put into the preheated oven, turning every 5-10 minutes.
  3. Heat 2 tbsp oil in a frying pan and, over a low-medium heat, gently fry the onion and the garlic for 5-10 minutes. Take off the heat, and stir in the marmite/stock cube.
  4. Mash the beans in a bowl well, until slightly pureed. Stir in the onion mixture and the bread crumbs, and season with salt and pepper.
  5. Shape the mixture into small-ish burger patties. Coat with flour.
  6. Once the chips are starting to brown, heat 1-2 tbsp oil in the frying pan. Fry the patties for 3-5 minutes on each side, until a nice brown.
  7. The chips should be golden by now. Take them out, drain the oil off on some kitchen towel if you have it. Enjoy your burgers in a bun with plenty of salad and sauces, and the lovely golden brown chips on the side.
