A wonderful recipe from our wonderful friend Evelyn. Thank you! Our greatest joys often come from the simple things in life – this pasta is so healthy, cheap and delicious and couldn’t be more simple to make. Enjoy!
Serves: 1 (or just multiply the ingredients by however many people you’re serving)
2 cups of boiling water (roughly)
75g of any pasta you like (preferably with around a 10 minute cooking time)
Half an onion (optional)
1 clove of garlic (optional)
1 tbs of either Italian Herbs and Spices OR Herbes de Provence
Pepper to taste
Half a vegetable stock cube
Grated cheese (optional)
Boil the water.
Chop the onion and finely chop the garlic. Fry the onion with a little oil in a large frying pan or medium saucepan on a medium heat for 7-10 mins until the onion is soft. Add the garlic to the pan about a minute before the onion finishes cooking.
While the onion is cooking, chop the tomato.
Now add the tomato, herbs, pepper and dry pasta to the pan, and give it a little stir. Pour over the boiling water until all the ingredients are just covered.
Sprinkle over the stock cube and stir in.
Bring the pan to the boil and then turn the heat down to a high simmer. Leave to cook for however long your pasta is recommended to cook for. Check on the pan periodically until the water has mostly evaporated and you’re left with nice tomato-y, herby sauce on your pasta.
Add cheese if you’re feeling indulgent 🙂
